Authentic Nameko Miso Soup
15 minutes- 150 g fresh Nameko mushrooms, rinsed briefly
- 500 ml dashi stock (kombu and bonito)
- 3 tbsp red or mixed miso paste
- 100 g silken tofu, cubed
- 2 scallions, thinly sliced
Bring the dashi stock to a gentle simmer in a pot. Add the Nameko mushrooms and diced tofu. Simmer gently for 3-4 minutes (the mushrooms will release their natural silky thickener into the broth). Dissolve the miso paste through a small sieve into the hot soup. Turn off the heat before it boils. Garnish with scallions and serve hot.
