Sautéed Shiitake with Soy Butter and Scallions
15 minutes- 300 g fresh shiitake, stems removed, caps sliced
- 2 tbsp butter
- 1 tbsp soy sauce
- 1 tbsp mirin or dry white wine
- 1 tsp grated ginger
- 2 green scallions, sliced
Melt half the butter in a hot skillet. Add sliced shiitake caps and sauté over high heat for 5 minutes until browned. Add the ginger, soy sauce, mirin, and the remaining butter. Toss vigorously for 1 minute until glazed and glossy. Garnish with chopped scallions and serve over rice or noodles.
