Golden Oyster Mushroom Sauté with Sage and Toasted Cashews
12 minutes- 250 g golden oyster mushrooms, gently pulled apart
- 30 g butter
- 5 fresh sage leaves
- 2 tbsp toasted chopped cashews
- Flaky sea salt and black pepper
Melt butter in a broad skillet over medium-high heat until it begins to foam. Add the sage leaves and let them crisp for 1 minute. Add the golden oyster clusters in a single layer and sear undisturbed for 3-4 minutes until golden-brown. Toss gently, cook 2 more minutes, then toss in the toasted cashews and season with sea salt.
