Description
The Garden Giant or Wine Cap mushroom. A permaculture superstar that easily produces enormous mushrooms with burgundy-red wine caps and stems up to 25 cm tall. Grown outdoors in garden mulch beds, it builds rich garden soil while yielding bountiful, delicious flushes from spring to frost.

Herb-Roasted Garden Giant Mushrooms with Potatoes
35 minutes- 400 g Wine Cap mushrooms, cut into chunky wedges
- 400 g baby potatoes, halved
- 3 tbsp extra virgin olive oil
- 3 cloves garlic, crushed
- Fresh rosemary and thyme sprigs
- Coarse sea salt and pepper
Preheat oven to 200°C (400°F). Toss potatoes and mushroom wedges with olive oil, crushed garlic, rosemary, thyme, salt, and pepper on a baking sheet. Roast for 30-35 minutes until the potatoes are tender and the mushrooms are golden and crisp on the edges. Serve as a hearty rustic side dish.
