Description
The gourmet jewel among cultivated oyster mushrooms. Unlike typical oyster species, its thick, cylindrical stem is dense, meaty, and possesses an extraordinary firm texture reminiscent of sea scallops or boletus. Retains its shape and bite remarkably well when braised or grilled.
Ecology & Fungal Role
Facultative necrotrophic parasite and saprotroph specifically associated with the decaying root systems of Apiaceae (such as Eryngium campestre). Highly prized wild in the Mediterranean basin.

King Oyster 'Scallops' with Garlic Brown Butter & Thyme
20 minutes- 4 King Oyster mushrooms (stems only, caps reserved for soup)
- 40 g unsalted butter
- 1 tbsp olive oil
- 2 sprigs fresh thyme
- 2 cloves garlic, crushed
- Salt and freshly ground black pepper
Slice mushroom stems into 3 cm thick circular medallions. Lightly score a cross-hatch pattern on both flat faces. Heat olive oil in a cast iron skillet over medium-high heat. Add mushroom coins and sear undisturbed for 4 minutes until deeply golden brown. Flip, add the butter, crushed garlic, and thyme. Baste the melted foaming butter continuously over the mushrooms for another 3-4 minutes. Season with flaky salt and serve immediately.
