Pan-Seared Lion's Mane 'Lobster' Steaks in Lemon Butter
15 minutes- 300 g fresh Lion's Mane, sliced into 2 cm thick steaks
- 40 g unsalted butter
- 1 tbsp olive oil
- 1 clove garlic, minced
- Juice of 1/2 lemon and fresh chopped chives
- Sea salt and freshly ground pepper
Place the mushroom steaks in a dry skillet over medium heat for 2-3 minutes to release excess moisture. Add olive oil and butter. Sear undisturbed for 4-5 minutes per side until deeply golden-brown and slightly crispy on the exterior. Add minced garlic and lemon juice in the final minute. Baste the foamy butter over the steaks, season, and finish with chives.
