The winter mushroom, famous worldwide in its cultivated form as Enoki or Enokitake. While wild specimens have orange-brown caps and velvety dark stems, traditional cultivation in high-CO2 bottles produces iconic bouquets of long, slender, snow-white needle stems with delicate button caps.

Enoki Beef Rolls with Sweet Soy Glaze
15 minutes- 200 g Enoki mushrooms, base trimmed and divided into small bundles
- 8 thin slices of beef sirloin or sukiyaki beef
- 2 tbsp soy sauce, 1 tbsp mirin, 1 tsp sugar
- 1 tbsp cooking oil and sesame seeds
Wrap each slice of beef snugly around a bundle of Enoki mushrooms. Heat oil in a non-stick skillet over medium-high heat. Place rolls seam-side down and sear for 2 minutes on each side until browned. Pour in the soy sauce, mirin, and sugar mixture. Simmer for 1 minute until glazed and sticky. Sprinkle with toasted sesame seeds and serve.
