The Shaggy Mane or Lawyer's Wig (Barbuda or Chipirón de monte in Spain). Celebrated as one of the finest gourmet delicacies on earth when young. Its cylindrical white cap is adorned with shaggy scales and boasts an extraordinarily delicate, buttery texture. Deliquesces into black ink within 24 hours of maturity.

Pan-Seared 'Chipirón de Monte' in Golden Butter
10 minutes- 300 g freshly picked pristine white Shaggy Manes
- 40 g salted butter
- 1 small shallot, minced
- 1 tbsp chopped fresh chives
- Flaky sea salt
Halve the mushrooms lengthwise. Melt butter in a pan over medium heat. Sauté the shallot for 1 minute until translucent. Add the mushrooms cut-side down. Sauté very gently for 2-3 minutes on each side until just heated through and tender. Sprinkle with chives and flaky salt. Serve immediately with warm crusty bread.
