Description
The mature, brown-capped strain of Agaricus bisporus. Allowed to open fully until its cap spans up to 15 cm, exposing rich chocolate gills. Its flesh loses moisture and concentrates into a dense, intensely savory 'mushroom steak' perfect for burgers and the grill.

Balsamic Rosemary Grilled Portobello Burgers
25 minutes- 2 large Portobello caps, stems removed
- 3 tbsp balsamic glaze
- 2 tbsp olive oil
- 1 sprig fresh rosemary, minced
- 1 clove garlic, finely grated
- 2 slices provolone or goat cheese
- Brioche burger buns and arugula
Whisk balsamic glaze, olive oil, garlic, rosemary, and a pinch of salt. Brush generous amounts over both sides of the portobello caps and let marinate 10 minutes. Grill or pan-sear on high heat for 5 minutes per side until tender. Top with cheese during the last minute so it melts. Serve on toasted brioche buns with fresh peppery arugula.
