Classic Garlic Sautéed Button Mushrooms (Champiñones al Ajillo)
15 minutes- 500 g fresh white button mushrooms, wiped clean and quartered
- 4 cloves garlic, thinly sliced
- 1 dried cayenne pepper (optional)
- 50 ml dry white wine
- Fresh parsley, olive oil, and sea salt
Heat extra virgin olive oil in a skillet over medium heat. Sauté the garlic slices and cayenne for 1 minute until fragrant. Turn heat to high and add the quartered mushrooms. Sauté for 6-8 minutes until golden. Pour in the white wine and let it bubble and reduce by half. Scatter fresh parsley, season with sea salt, and serve with crusty sourdough bread.
