Shiitake (Lentinula edodes) is the perfect bridge between haute cuisine and clinical medicine. It is the second most cultivated mushroom in the world (after the button mushroom) and has been used in Asia for thousands of years both for its delicious, deep “umami” flavor and its ability to fortify the blood.
Pharmacologically, Shiitake is a true superstar. Its main compound, Lentinan, is so potent at modulating the immune system that it has been isolated and converted into a standard injectable drug in cancer treatment protocols in Japan. Furthermore, thanks to Eritadenine, Shiitake acts as a “pipe cleaner,” actively reducing LDL cholesterol and protecting the cardiovascular system. As an absolute precaution: it must never be consumed raw.
